GYPSUM - The small independent grocery store aims to improve its products and expand its business, in spite of the opening of the big box down the street. When Costo opened , locals feared the worst, Columbine Market in Gypsum would suffer and perhaps be forced to close. Thankfully, that is not the case. While the market has changed somewhat, it is all for the better.
Columbine’s owner and store manager are on the sales floor, talking to customers and finding out what the customers want to see on the shelves. Now you can find over 2,000 new items, mostly organic and natural foods and specialty items not available at the big box. In addition, the market is offering grass-fed beef from a monastery in Utah.
The locals spoke and market owners listened, a great example of matching consumer and business needs. If you are a visitor to the valley, after you arrive at the Eagle Airport, stop by Columbine Market in Gypsum and support the "little corner grocery store."
